Just next door to Soave, the little-known region of Gambellara produces just a fraction of the wine of its famous neighbour, due to the much hillier terrain here.
The Cavazza Creari is made entirely from Garganega (best known as the main grape in Soave). The wine spends about 36 hours macerating on skins, and 6 months maturing on its own yeast, with regular lees stirring. This process imparts a richer texture and greater complexity. In the glass, the wine is a deep, brilliant yellow with gold reflections. The nose is complex, with mineral notes, ripe yellow fruit and saffron. Well-rounded on the palate, with a somewhat oily texture and a good amount of length.
