This wine still has a small amount of very fine sediment at the bottom of the bottle, resulting from the natural fermentation process, hence 'Sui Lieviti,' translating to 'on the lees.' In the glass, the wine is straw yellow, with extremely fine, persistent bubbles. If not poured delicately, it may be slightly cloudy. The nose is fresh and fruity, with crusty bread aromas resulting from the time on lees. Dry, tangy and well-balanced, this is a sparkling wine with an attractive bitter-almond finish.

Cuccimanné is the abbreviated name used in Salento for the cutrettola, a small bird often found among the Verdeca vines.
